Born on 7th November 1981 and originally from Lannion, Nicolas Jaulmes is Pastry Chef at the Buddha-Bar Hotel Paris.
From his first pastry experience in the kitchens of a neighbourhood bakery to his current position, Nicolas Jaulmes has continually nurtured his creativity.
After obtaining a CAP pastry diploma, he joined the research and development department of Maison Ladurée where he learned the demands and rigours of the pastry trade and developed a pronounced feel for aesthetics. In 2014, as the head pastry chef in charge of the kitchens of the culinary concierge service, Nicolas Jaulmes completed what he called his "library of flavours", a compilation that would become one of his main assets in the kitchen.
Nicolas Jaulmes bases his patisseries on three basic principles; freshness, poetic elegance and balance.
In 2015, Nicolas Jaulmes joined the team of the Buddha-Bar Hotel Paris where he is able to nourish his passion for Asia as well as his love of the fusion of international products. He oversees the dessert menu for the restaurant Le Vraymonde as well as the Tea Time menu of the Qu4tre lounge bar. His creations offer a genuine taste experience that testifies to his creativity, his love of beautiful things and his passion for travel.
